Quick & Healthy Red Lentils Daal (North Indian)

Ingredients:

1 Cup red lentils – picked and washed till water runs clear

3 tablespoons of canola oil or ghee (tastes so much better with ghee)

1 tsp turmeric powder

1 tsp cumin powder (roasted and then powdered)

2 cloves of garlic - minced

1 tsp salt

1 to 2 green chillies – minced – adjust this to how hot you would like it

4 cups of water

2 medium tomatoes chopped into 1 cm dice

1/2 cup chopped fresh coriander

Method:

Heat the ghee till it becomes fragrant. Now add all the ingredients except for the tomatoes and coriander.

Cook till the daal looks just cooked. The grains will flatten out or you can taste them. Don’t over cook as the daal will become mushy. Add more water if you want a slightly looser consistency.

Now add the tomatoes and coriander and bring back to a boil. Remove from heat and serve with rice or roti.

This is an excellent accompaniment to the Seven Spice Potatoes recipe.

Serves 6 to 8.
