Please don’t tell me you enjoy frying onions…!!!

The sulphurous odour gets into my hair, clothes and every nook and cranny of my house even if I shut the kitchen door and have the range hood going at full blast.

If I can avoid using them, I do. Else, I try and double or triple the quantity, use what I need for the recipe on hand and stick the balance in the freezer. It saves me having to do it repeatedly.

So here’s how you can simplify the process:

Buy a gadget that will help you dice onions / vegetables quickly. I use the Nicer Dicer. All you need to do is peel and halve the onions, place them on the cutting blades and slam the lid down. Voila! You have beautifully diced onions.

Put some Extra Virgin Olive oil in a hot pan, add the onions and a large pinch of salt. This, by the way, is what helps cook them quicker because it draws the moisture out of the onions quickly and you can then crank up the heat and dry off the liquid. To brown them, turn the heat down and allow them to turn golden brown.

Please do a large batch at a time. I keep a box solely for onions in my freezer and never bother washing it as it stays in there for the next batch. Saves me time and effort… 😊

On another note, ever tried setting your own yogurt? I’m sure you would have tried store bought Greek yogurt. It tastes decidedly sour and makes me screw up my face with every mouthful.

I came back from the gym this morning and before heading off to work, I made a quick Indian vegetable dish – NO Onions!!!

If you like simple wholesome Indian vegetables, then try the attached recipe for string beans and potatoes. It took me all of 15 minutes to cook this morning and will mature in taste over the next 3 to 4 days in my fridge. Evening dinners sorted as I have taken out some frozen lentils from my freezer to go with it.
